Today's blog post will be short and sweet. A little side story: One summer I lived with my cousins while I worked to save money for college. Best summer ever! Every night they would have family prayer. Each time it was my Aunt's turn to say the prayer, one of my cousins would cough/whisper "short and sweet." I guess my Aunt had a tendency for really long prayers??? I don't know, but it struck my funny bone every time it happened. Now, whenever I hear the phrase short and sweet - I think back to that wonderful summer and all the memories that go with it. Good times.
Anyhow, back to my "short and sweet" blog post. I'll finish going down memory lane with my family while they're stuck at the dinner table with me. ;) Today I want to share with you a favorite snack of mine. No-Bake Pumpkin Pie Bites - Yum! The combination of the pumpkin and the pecans tastes so good to me! One of the great things about this snack is they are very easy to make. So easy, we could fit everything in a one minute video. Delicious, healthy, and easy. Triple Win! (The Phrase triple win could lead me into another story, but I'll refrain.)
No-Bake Pumpkin Pie Bites
1 cup Medjool Dates
1/2 cup Pumpkin Puree
1 cup chopped and Roasted Pecans
1/4 cup Shredded Coconut
1 1/2 tsp. Pumpkin Pie Spice
PInch of Sea Salt
Soak the dates for 10 minutes in filtered water. Drain and put into food processor with everything - reserving 1/4 cup of the roasted pecans to use later. Process. When mixed, roll into 1 inch balls and then roll the balls in the reserved roasted pecans. Store in the fridge and enjoy!
